Miraculous Mug Muffins and Treats!!!

In the past few months, I have been toying with idea of trying the Paleo diet again.

I know, I know eating overall healthy is best and not omitting any food groups is truly my belief, but I am finding I have some issues with wheat! My joints are not happy when I eat too much of it!

I also find that I do eat more veggies and fruit when I follow the Paleo diet since I am not eating crackers and such!(I followed it a couple years ago).

Now, I make my own bread with Non-gmo, organic and no glycophosphate (Round Up) sprayed wheat(yes your organic, heathy wheat bread is sprayed with Round Up unless you buy it from a grower who states that they do not! Mine is Montana Wheat Company). It doesn’t seem to bother me as much, but I find its really hard to keep up with the bread making and I don’t make wraps or crackers-I could, I just struggle with time to do so!

Okay, so now that I have told you this, let me explain my title of this blog post-

Miraculous Mug Muffins and Treats-

I have found countless recipes for mug muffins, breads, cookies, cakes and brownies!

Most are very Paleo friendly, meaning they use Paleo “flours- Almond, Cashew, Coconut and Cassava flours. They also use Stevia or erythritol sweeteners in place of sugar!

The awesome thing about these recipes is you feel like you are eating something bad, but it is really quite healthy! Most are higher in protein or its easy to convert into a protein muffin, bread, cake or brownie by adding protein powder!

They also use less of the “flours” so you actually get more servings out of a bag of what ever you are using!

Mug recipes are typically one to two servings and that also helps cut down on the temptation to over eat treats!

I have also found a neat way to partially make up the mix so you can throw it in to a mug (or large glass mixing cup like I do!) and add the wet ingredients in the morning for a quick, healthy and filling breakfast!

I take all the dry ingredients and put into a small baggie and I either write the wet ingredients and amounts on the bag or I make sure I save the recipe on my phone.

Then the next morning I either mix the wet ingredients up in the baggie or I dump everything in a Pam sprayed large mug and combine!

Most of the recipes only take 1-2 minutes to make and then you have your breakfast!

Of course, you can also make a quick treat after dinner as well!

I have found these to be time saving, healthier choices and quite filling for breakfast in the mornings! I am often flying by the seat of pants out the door in the morning, so these are a lifesaver!

My Favorite Mug Recipes-

Cinnamon Roll Mug Cake

Ingredients:

1 scoop vanilla protein powder 32-34 grams

1/2 tsp baking powder

1 T coconut flour

1/2 tsp cinnamon

1 T granulated sweetener of choice(I use Pyure)

1 large egg

1/4 cup milk of choice

1/4 tsp vanilla extract

1/2 tsp cinnamon

For the glaze:

1 T coconut butter(or any butter) melted

1/2 tsp milk of choice

pinch cinnamon

(I also a just a pinch of Pyure)

Mix the “butter”, milk and cinnamon(and Pyure if you want) set aside and spread on top when mug cake is done!

To Make Cake:

Mix all ingredients together in a Pam sprayed mug or glass measuring cup. Microwave for 60 seconds or until done!


Lemon Mug Cake:

Ingredients

1 tbsp almond flour

1 1/2 tbsp coconut flour

1/2-1 tsp lemon extract(or one to two drops of lemon oil!)

1 tbsp granulated sweetener of choice(Stevia or Pyure)

1/2 tsp baking powder

1 large large egg

3 tbsp milk of choice

Sugar Free Vanilla Glaze

2 tbsp sugar free powdered sugar

1/16 tsp vanilla extract

1 tsp milk of choice

Instructions

In a small bowl, combine the dry ingredients and mix well.

In a separate small bowl, combine the milk with the egg and whisk with the lemon extract. Add the mixture to the dry mixture and mix until just combined.

Grease a large mug or a glass measuring cup generously and pour the batter in it and microwave for at least 50 seconds, depending on the microwave.

(You can turn this into a protein Lemon Mug Cake by adding 1 scoop of vanilla protein powder and add a little more lemon and milk-just add by the tablespoon until like cake batter)


Ultimate Mug Brownie-

Ingredients

Instructions

Microwave version

  • Grease a small cereal bowl or deep mug and set aside.
  • In a mixing bowl, combine the protein powder, coconut flour, baking powder, granulated sweetener and cocoa powder and mix well.
  • In a separate bowl, whisk the egg with the milk and pour into the dry mixture and mix until fully incorporated. Top with chocolate chips if desired.
  • Microwave for 60 seconds and remove from microwave and enjoy immediately.
  • This is one brownie you can eat for breakfast!!!
